The organic fir "Axion Esti" is collected by bees in the lush fir forests of Mount Mainalo in Arcadia, at an altitude of 2000 m. There, where nature shows its greatness, the bees carefully pick the spruces and a variety of mountain herbs, thus creating the world-unique "Vanilla Spruce" honey in gold and pearl shades. It is the first honey to be officially recognized as a protected designation of origin product. Not only is it unique, but it is also low in sugar; its taste is sweetish and its texture does not crystallize.

Premium Honey "Fir Vanilla" is the only Greek honey produced from the rare black fir trees of Mount Mainalo at an altitude of almost 2,000 meters, the highest mountain in the Menalon highlands of Arcadia, Peloponnese. How spruce vanilla honey was harvested
Spruce vanilla honey is harvested between early May and mid-July. It is named "vanilla" because of its light color, a shade between pearl and vanilla. The spruce vanilla is harvested at the same time as our other honey flavor spruce honey and is separated from spruce honey by extracting the lighter cream colors from the same honeycomb. Vanilla spruce honey has a thick texture with hints of vanilla and caramel flavour.

It also has a much lower sugar content than other honeys, as it is particularly low in glucose, which means it usually never crystallizes.
The honey texture crystallizes naturally, but it can be restored to liquid form if the honey vase is placed in a pan of hot water (up to 45 degrees C or 110 degrees F).
