Dill is one of those aromatic plants that we don't pay much attention to, but their absence would be a significant shortcoming for our kitchen.
With roots in the Mediterranean and southern Russia, the dill consists of a twig with many leaves as threads. In some countries, the seed is used in the kitchen, but in Greece we only use the twigs. It has a mild flavor, a bit like fennel.
Known since antiquity for both its flavor and its medicinal properties, dill had a prominent place on the table in the Middle Ages because it helps digestion, especially large meals.
Dill is widely used in Swedish dishes, especially in creamy cold sauces but also in dishes from Central European countries and Russia. In Greece, we find it in fricassees, in our salads, vegetable pies and meatballs.
